My Super Healthy Super Slaw

Life can be ridiculously busy, especially when you’re working full-time and or parenting / grandparenting, and trying to keep eating healthily too! But being busy doesn’t mean you should give up your commitment to healthy eating and go for unhealthy takeway - as tempting as that may be for some! By sticking to your own home-prepared meals, you will be not only eating a lot better, but you will be saving money at the same time rather than blowing your hard earned dollars on unhealthy take-away options.

My Super Slaw is SO EASY that you will hardly believe it. You can even meal prep the ingredients ahead of time so that all you have to do is assemble and mix the salad just before you're ready to eat!

This has got to be the EASIEST salad in the world! It also contains both beetroot AND carrot, which are two superfoods that will do amazing things for your health, wellbeing and general feeling!

Beetroot is a great source of iron and folate (naturally occurring folic acid). It also contains nitrates, betaine, magnesium and other antioxidants (notably betacyanin). You might not have realised, but beetroot can help lower blood pressure, boost exercise performance and prevent dementia.

Do you know what else beetroot can do for your body? It’s pretty amazing. Here’s just a few things:

-        It can lower your blood pressure and improve blood flow (huge tick for me, as a Chronic Fatigue sufferer)

-        Boost your stamina (another TICK - I need & value energy after being without it for so long!)

-        Fight inflammation

-        Repel Cancer

-        Provide valuable nutrients and fibre

-        Support detoxification.

Given this recipe takes less than 5 minutes to prepare, there are no excuses! Be sure to try out this superfood slaw tonight!

Ingredients:

1 Fresh Beetroot

2 Carrots

2-3 Tablespoons of Colway Real Mayonnaise from Aldi

(or another good quality mayonnaise or aioli).

Method:

    1. Peal the Beetroot and Carrots and then rinse under running water.
    2. Grate the beetroot and carrot.
    3. Place the grated beetroot and carrot in a large bowl and add 2-3 heaped kitchen tablespoons of mayonnaise (taste to get your preferred flavour).

Salad is served!

Re-create Your Salad for Delicious LUNCHES!

This salad is so ridiculously good for you, that you won't want to waste any. I recommend you keep any left over salad in the fridge, and then use it over the coming days in lunch rolls or sandwiches with cold meat such as ham or roast chicken. If you are have prepared this salad to have in conjunction with my Sensational Chickpea Salad at a family bbq, then I also recommend that you refrigerate your chickpea salad too and use this on your lunch rolls WITH the Superslaw on there too! I've had this and it's so healthy and truly flavoursome - two salads in one on a delicious lunch roll. There's one or two extra healthy and delicious lunches right there, ready in your fridge. How's that for healthy and low cost yet high quality living!
